Rondolino home style rice salad


for 4 people: 

250g or 1 1/4cup Acquerello rice
30 sun-dried tomatoes
70g or 1/2cup diced cheese
2 artichokes
100g or 3/4cup diced ham
50g or 1/2cup taggiasca olives
Extra virgin olive oil
Basil and salt

The Rondolino home style rice salad by Michelin starred chef Peter Brunel


Bring water to boil and season to taste. Add Acquerello rice and cook for 10 minutes. Strain rice and put it into a bowl. Add diced ham, olives, artichokes pieces, sun-dried tomatoes, diced cheese, Extra Virgin Olive Oil and basil. Stir and serve.
